A Meat Lover Making Dinner for a Vegetarian

Although I had the entrée down, I still had to concoct a Pescatarian friendly appetizer as well. I had some packaged Pillsbury dough in the fridge, sun-dried tomatoes, cream of spinach (from dinner the night before lol), mozzarella cheese, pesto sauce leftovers and olives so I decided to make little tarts. They actually came out so good that I am adding them to my hors d’oeuvres go to list.
Personally I love meat and could not picture life without chicken but I understand the health benefits of their choices and have enjoyed learning different dishes to cater to their needs. Now luckily- my friends did not go down the vegetarian or even more extreme- vegan paths & they still eat seafood so I was able to still prepare one of my favorite things- FISH!
Being that my friends are from the islands, they prefer whole fish over a filet when they can have it done right. So although I only made one whole snapper in my entire life- I decided to jump off the deep end and give it another go.

They actually came out so good that I am adding them to my hors d’oeuvres go to list. I threw on some cheese slices & heirloom tomatoes and called it a day, easy peeesy.
So if you find yourself in a pickle cooking for those with dietary restrictions- don’t panic- there are meatless options out there and I am totally all for you stealing mine! See the photos below.
